The Radisson Blu Hotel Kaushambi has started a culinary journey to the hinterlands of Punjab. With food that has a typically robust flavour, Punjabi food has been thoroughly misinterpreted in Delhi. This is where the eccentric genius of Executive Chef Roshan Mendoza and Masterchef Vishal Nigam comes in. Being a Punjabi himself, Chef Nigam is totally immersed in his elements and recreates his tastes from chilhood. He actually brought back the famous Gur Pade and a killer Gobi ka Achaar for everyone to taste.

The festival is being hosted at their effervescent Indian restaurant, Kama with an ambience that takes you back to the pinds of Punjab. Replete with a desi dress for the waiters and Punjabi music, the experience is your trip through the lush green Punjab. The menu is large and has some really interesting twists. Amritsari Machchi: One of Amritsar’s most famous dishes, this fish tikka with flavours of Ajwain is a must for an authentic Amritsari experience.

Khasta Kukkad Tangri: The cooking method give it it’s characteristic taste. It’s super crispy batter fried chicken drumsticks.

Dhaba Murgh: A simple chicken curry which last a mark on our palate without heading off to complexities.

Langar Vaali Dal: You have had dal and then you will have this Dal. Perfectly flavoured with robust spices, a mixture of 3 daals gives it a taste that will resonate on your palate.

Gosht Beliram: Gosht Beliram is one dish that wavers away from the typical robustness of Punjabi flavours. Rich in almond gravy, Gosht Beliram has a royal, creamy texture which sets it apart from any of the Punjabi dishes tasted ever. The dish traces it’s routes to the courts of Maharaja Ranjit Singh where one of his famous chefs Beliram cooked it up. The dish has been known after his name since then.
