Deep-fried, crisp and puffy, bedmi poori is made with wheat flour and ground urad lentil. Served with aloo subzi (potato gravy), it is heavier than plain pooris, which are only of regular flour. It is considered to be one of the favourite Sunday morning breakfast in Old Delhi and chefs at Edesia, Crown Plaza Today Okhla, recreated the same magic with this dish in their restaurant.
Kanji is a liquid extract of a food – usually rice or mustard. This is a Marwadi delicacy of moong dal vadas, soaked in mustard flavoured kanji. The kanji has to be made at least a day in advance so that all the flavours are released into the water and get mixed well. Mustard kanji is usually enjoyed in the winter, as mustard is a food which produces heat in the body. It is a hot favourite dish among the vegans in the Old Delhi.

Daulat ki Chaat is a winter dessert from Lucknow (where it’s called nimish) that was used to be made for the Nawabs. It’s made of whisked milk and covered with a top saffron infused layer. 6. Fried Parantha from Paranthe wali Gali
Paranthe wali gali is a legendary landmark in Old Delhi. There must be hardly anyone in our city who is unaware of this place and is a stranger to the lip smacking varieties of paranthas served by them. The Paranthas served here is strictly vegetarian. Paranthas are stuffed with fillings like Chilies, Lemons, Kajus, Badams, Matar, Khoya, Rabri, Bitter gourds, Lady fingers, Radishes, Carrots, Cauliflowers, Paneer, Aaloo, etc.
Haleem is in itself a special dish. Made up of crushed wheat, crushed barley and many pulses along with meat, it is cooked in mild temperature for a great time. A must have specialty during festivals and winters.
