WelcomHotel, Dwarka launches it’s new menu, Goat on Grill. The bespoke all day Coffee Shop Pavilion 75 showcases Chef Akshay’s newest creations. Trained in the States, Chef Akshay has an in depth knowledge of grilling and barbequeing techniques. He incorporates those techniques to one of India’s most loved meats, Goat.

The Goat on Grill is a part of the A La Carte menu which tends to change every few months, thanks to the innovations of Chef Akshay. We start off with the Spare Ribs. Reminiscent of the Texan spare ribs, the meat of these ribs falls off easily, there’s a layer of fast which slowly melts down to provide the beautiful taste. Cooked slowly overnight with a dry rub and tempered with a sweet barbeque sauce, the caramelised sugar and melted lard combine in a beautiful combination.

The next item on the totem pole are the steaks from the thighs. Well done, these steaks impress you with the slightly chewy texture with a decadent sauce. The mash and the veggies accompanying it play the perfect supporting role.

The lamb chops come next. Again, it’s the premium quality of the meat that impresses you. The sauce seems a little less on this one as it suffices for only the meat not the accompaniments.

In mood for some Indian? Dive into the Tak-A-Tin. There’s Keema Pav and Fried Liver. The perfect mince of the Keema and the nutty texture of the Liver provides a perfect companion to the maska pav.

Pavilion 75 also features an extensive Sunday Brunch with a choice of picks from Indian, Asian and European Kitches. But the “Goat on Grill” is something that should on every foodie’s wish list.
