Indian food has come a long way. It has come out of our humble kitchens to the prestigious Michelin starred restaurants. With a plethora of places serving out North Indian food in Delhi, the food at most 5 star hotels has been labelled pretentious at best. But there are some Chefs who have been creating some landmark food. One of these places is Dvar at Radisson Blu Dwarka. Located in a community which loves it’s dose of Indian food, Dvar’s loyal customer base speaks volumes about the food that Executive Chef Rakesh Sethi has created.
We try out the Chef’s special menu that showcases the best of his genius. Paired with a red Merlot we started off with a Kesari Murgh Shorba and a Dal Shorba with desi samosas instead of croutons. The uniqueness of the two soups is the clarity of flavours. The starters include a Galauti Kebab with a sweet Varqi Parantha and a Creamy Afghani Chicken Tikka. Chef Sethi also whips up something contemporary for us. A Dahi Kebab with a Varqi Parantha beneath and some hummus on top. The sweetness from the Parantha along with the sourness of the yoghurt combines like a magic with the ground earthiness of the hummus. The Bharwan Aloo Tilnaaz are beautifully sweet with flavours of cottage cheese and dry nuts.
For the mains, we combined a delectable Chooza Makhni along with a creamy velvety Nalli Shehnai Gosht. The fall off the meat mutton with the creamy gravy was a perfect offset to our garlic naans. A Khumbh Hara Pyaaz grazes our taste buds with flavours of Mushrooms and onions. A Mutton Biryani with long grained fragrant rice and succulent pieces of meat filled up any remaining space in our bellies. We finished off our decadence with a flambéed Gulab Jamun.
