The potato obsession is back with Navratri and foodies all over the place are on a hunt to find different forms of this kitchen king for consumption. On such an occasion, the corporate chef of SRS 7 dayz has shared his best food wishes in the form of some easy to make recipes. Enjoy the festival with simple foods and basic ingredients like potato and cottage cheese.

  1. Aloo Anar Chaat:

Ingredients:
Baked Potatoes ( 200gm)
Refined Oil ( 150ml. )
Ginger Chopped (05gm)
Mint finely chopped (10gm)
Green Chilly -( 05gm)
Green Coriander-    (10gm)
Lemon Juice (15ml.)
Pomegranate (20gm)
Rock Salt (07gm)
Cucumber cubes ( 10gm.)
Lemon wedges (01 no.)Aloo Anar Chat

 

Steps to Follow:

  1. Bake the potatoes and peel the covering. Cut it in medium sized cubes.
  2. Take a pan, heat the oil, fry the potatoes till they become golden brown. The trick to make them crispy is to fry them on low heat.
  3. Add some chopped green chillies, diced mint leaves, half of coriander leaves, salt-to-taste, lemon juice and toss until ingredients are mixed well.
  4. Put the mixture in a serving bowl and top with pomegranate seeds, cucumber cubes and decorate with lemon wedges.

 

  1. Paneer Mirch Roll:

Ingredients:
Cottage Cheese (100 gm.)
Baked Potatoes (60gm.)
Hung Curd (60gm.)
Rock Salt (02gm.)
Refined Oil (05ml.)
Green Chilli (05 gm.)
Chat Masala (05gm.)
Desi Ghee (15gm.)
Green Coriander (one spring)
Green Chutney  (30gm.)
Paneer Mirch Roll

Steps to follow:

  1. Bake the potatoes, and peal them length wise. Toss them with half qty. of chat masala along with some green chillies.
  2. Put the hung curd in a bowl, mix it thoroughly with chillies, salt and oil.
  3. Cut the cottage cheese into thin slices and place it a bowl. Add the potato mixture of step 1 here. Mix the hung curd so that the mixture is well tossed and dipped in the curd. Once it is done, set it aside for at least two hours.
  4. Take a pan, heat it with oil on medium heat and put the final mixture. Cook it for five-six minutes and then turn it around. Repeat.
  5. Once it is cooked, put it in serving plate and sprinkle with chat masala. Serve hot.

 

  1. Paneer Tomatoes Rasedar:

Ingredients:
Cottage Cheese (80gm)
Tomato (200gm)
Green Chilly (2gm)
Desi Ghee (10gm)
Fresh Cream (20 ml.)
Green Coriander (03gm)
Chopped Ginger (02gm)
Rock Salt (10gm)
Paneer Tomatoes Rasedar

Steps to follow:

  1. Make a tomato puree by peeling the blanched tomatoes and removing their skin and seeds.
  2. Heat a heavy pan on medium heat with oil. Add ginger, green chillies, puree and cook for a while. Once it is cooked, add salt and mix well. Finally, add some cream.
  3. In a separate pan, boil two cups of water and add sliced pieces of cottage cheese into it. Do it only for five seconds after which you should immediately add the cheese into the gravy mixture.
  4. Garnish with coriander and its ready!

 

Serve and savour!
