It’s the season of Awadhi and Dimsums this year in Delhi. Another foray into one of the lost cuisines of our regions, the Dastarkhan-e-Awadh is spearheaded by Celebrity Chef M Rehman at Infinity, Crowne Plaza Mayur Vihar Noida. A descendent of the bawarchis and khansaamas of Wajid Ali’s era, his food speaks volumes of his knowledge.

Running upto the 20th of Spetember, this buffet offers you a peek into the food of the royals. There is a wide selection of kebabs, biryanis and curries to make your choice from. Chef Rehman also dispels one of the biggest myths about Awadhi food’s lack of vegetarian dishes but with his plethora of options.

We taste a few of Chef Rehman’s signatures. There are 3 types of Galauti kebab including Lamb, Black Chickpea and Mixed Vegetables. The Lamb version is succulent and soft but the surprise is the Mixed Vegetable Galauti. Although being a hard core non vegetarian, this delicate vegetable kebab manages to offer you taste beyond your expectation.

The Paneer Zaffrani Tikka leaves behind a soft, heavenly taste of saffron on the palate.

Wash it all down with Jaljeera to temper the tastebuds.

The mains are served out on a heavy Bronze Thaali, keeping in theme with the festival. The Nihari is a bit chewy while the Lagan Ka Murg peels off easily leaving subtle distinct flavours. But it’s again the vegetarian dishes which rule the roost with the Tamatri Paneer and Nawabi Baigan Bharta standing out as highlights.
