The Leela Ambience Convention Hotel has started a culinary journey on the NH1. A journey that will lead us across the northern part of the country in the search of some of India’s most authentic dishes. Our first stop is in the hinterlands of Punjab, Amritsar. With food that has a typically robust flavour, Punjabi foo has been thoroughly misinterpreted in Delhi. This is where the eccentric genius of Executive Chef Rohit Tokhi and Chef de Cuisine Ashwani Kumar Singh comes in. Chef Ashwani actually tries to recreate what he has tasted locally and he suceeds quite beautifully. He actually brought back the famous Gur Halwa for everyone to taste from his trips to Punjab.
The festival is being hosted at their effervescent North Indian restaurant, Dilli 32 with an ambience that takes you back to the pinds of Punjab. Replete with a desi Sharaab Theka, Khaats and Punjabi music, the experience is your trip through the lush green Punjab. The menu is large and has some really interesting twists. Amritsari Machchi (INR 732): One of Amritsar’s most famous dishes, this fish tikka with flavours of Ajwain is a must for an authentic Amritsari experience.
Lawrence Road De Tawa De Tikka (INR 732): The cooking method give it it’s characteristic taste. The succulent pieces of mutton are perfectly marinated followed by grilling in a Tandoor before finishing it on the Tawa.
Chicken Curry (INR 832): A simple chicken curry which last a mark on our palate without heading off to complexities.
Magaz Masala Taka Tin (INR 832): Brain crushed to a pulp that impresses with it’s peculiar nutty flavour and slimy texture.
