The California Boulevard is one such place which has never failed to impress me on my repeated visits. The American lifestyle it depicts, with the long palm tree façade, the walk of fame which adorns the floor, the Harley Davidson standing on the entrance, the LED panels of Hollywood stars and most importantly the experimental world cuisine food that it serves, it’s an entire experience altogether. With so many awards under its belt, it is probably one of the best fine dine multi cuisine restaurant of the National Capital Region.
Chef Satish, who heads the kitchen brigade of the Gurgaon branch has tons of experience in the industry. He stresses on the need of a menu refurbish of every restaurant to sustain in the long run by carrying an ABC analysis, where listings with high or moderate demand are retained in the menu and low selling dishes be replaced with the new ones. We were invited over for a tasting session of some classical recipes from various cuisines which were executed to perfection. The chef’s tasting menu consisted of the following dishes which are going to be the additions.
The Corn and Cheese Croquette: A French nibbler, cylinders of vegetables, corn and cheese golden fried and served with mustard mayo.
Gazpacho soup: A chilled and refreshing soup from Spain, with a base of tomato. It is quite a refresher from the blazing summer heat.
Brie Chicken Soup: A creamy and rich French soup made with brie cheese was super appetizing.
The Waldorf salad: The American salad, with crunchy green apples, walnuts and chopped celery wrapped up nicely in mayonnaise.
The Hawaiian Chicken Salad: Sliced chicken, with juliennes of peppers and pineapple tossed in cream cheese and pineapple juice dressing served beautifully in a scooped pineapple.
Fried Halloumi: Halloumi cheese, dipped in egg, rolled in bread crumbs, deep fried to golden brown colour and served with watermelon, basil and mint dressing.
Lamb Brochette: The succulent lamb chunks, skewered with mushroom and peppers, grilled and served with tangy mint sauce.
Cottage cheese mille fueille: Fillets of cottage cheese scooped and stuffed with mushroom, spinach and peppers, served with blanched tomato sauce.
Chicken cordon bleu: Pounded breast of chicken, stuffed with ham, cheese, golden fried and topped with creamy blue cheese sauce.
Sacher Torte: Viennese, chocolate cake filled with gooey apricot jam, garnished with a soft strawberry flavoured Macaroon.
Bombe Alaska: Trio of ice creams, covered with a layer of chocolate cake, topped with a blanket of egg white and baked.
Besides the specialties like Palak patta chaat, Kaffir lime chicken tikka, Meat lover’s meat loaf and their acclaimed dessert The Kulfi Gazak, I now have a reason to be pulled towards The California Boulevard with their new menu which is going to be launched anytime soon.
