Just a few days ago, I received some beautiful pastry items from Baked Love, who’s page I had been following on Facebook and Instagram. I was very excited when I finally got to try a few of the pastries.

A quick review of the items I tried (All eggless):

Lemon Cupcake

A tangy lemony cupcake with a vanilla butter cream icing that melts into your mouth. If you’re a fan of baked products that contain lemon, you’ll be in paradise and if you don’t like the taste of lemons, this will surely change your mind. The cupcake is extremely soft, baked to beyond perfection. The presentation will make you fall in love at the first sight, that you might not even want to destroy the beautiful cupcake. The combination was just right. Every element was done with perfection. It wasn’t overly sweet or overly citrusy. Well balanced and highly recommended especially for the summers.

Chocolate Fudge Brownie

These were soft, gooey, super chocolatey brownies, with loads of butter but worth the calorie intake. Best served hot and preferably with ice cream and chocolate sauce.

Fondant Cake

This cake first and foremost was a visual treat. It was beautifully done in purple and white. For a moment I didn’t want to spoil the hard work put in to make the cake, but I eventually did. It was a chocolate cake, which was very soft and rich and the fondant frosting tasted really good.

Hazelnutella Cake

This was a spongy and soft, pure hazelnut cake with nutella icing. It felt as if I was having Ferrero Rocher; the icing being the chocolate and the cake being the hazelnut. A delightful cake that was pleasing to the eyes.

Chocolate Cupcake

Again, the chocolate cupcake was very soft and the icing was done just perfectly. It’s one of the best cupcakes I’ve had.

Baked Love is the tireless work of the very enthusiastic and talented Vatsala Jain, who’s not only passionate about baking but has also attended the Cake Decorating Programme at Le Cordon Bleu, London.

She says, “Since I was 14 years old, I wanted to be a pastry chef. Baking is not just a job for me; it is about making people’s hearts fill with joy as soon as they take their first bite of that cupcake (or anything else that I bake)! My specialization lies in eggless, customized cakes and cupcakes. Eggless cakes are often assumed to be dry and dense and the increasing demand for the same made me work towards perfecting the recipe.

It was during college that I decided that I would give my all to make my dream come true. Though I had no professional training then, in my 3rd year of college (2013), I put up a dessert stall in the annual cultural festival and it was a massive success. Everything I had made was sold out by the end of it and I had received a positive feedback from each and every customer. A lot of support in my environment only fuelled me to work harder and Baked Love was born.

 

It has been 2.5 years since and there has been no looking back. Initially, I taught myself how to bake the perfect cake, torte, fill and ice it and decorate it using various techniques. I learnt on-the-job and it was, and still is, delightful to have the support and encouragement of all my customers.
In January 2015, I attended the Cake Decorating Programme at Le Cordon Bleu, London and gained a deeper insight on cakes and cake decoration. I am excited to showcase this knowledge and am looking forward to bake a lot of love for everyone!”
