The spice markets of Kerala have been known since times immemorial. One of the important ports on the Malabar coast, Kochi was one of the most richest places with the intense amount of trade that it used to do with Mesopotemians and Romans dating back to 3000 B.C. The Arabs had established a naval route which allowed them to trade spices and they were later followed by Portugese and rest of Europe. This is one of the main reasons behind the multi cultural cosmopolitan face of Kochi. But as we are moving towards the modern way of life, we are losing our touch with nature. Although spices are the essence of Indian food, but most of us buy spices in packets without being able to appreciate their aroma and essence. There can be no better place to rediscover the essence of spice other than Kerala. On a recent visit to God’s Own Country, I reconnected with that essence in a way never before experienced.

Our search for a spice takes us to the hills of Thekaddy, a five hour drive from Kochi along the lush green landscape of Kerala. Although the way is dotted with plentiful of plantations and shops selling spices, our target is the hundred year old Green Land Spice Garden in Thekaddy. I meet up with Shinoj Kallunmakkal, the owner of the spice plantation as he rolls up his lungi and tucks his children in bed for an afternoon nap. The 20 acre plantation has been in his family since it’s inception. Our walk has been designed in a path around the house without delving deeper into the plantation. The shade of the trees offers us a respite from the sun as Shinoj sets out to show me the spices in his armoury.

He occasionally picks off a leaf, crushes it in his palm and hands it over to me to recognise. I miserably fail the first two, without a fault of mine though. The All Spice is akin to the Garam Masala of North, giving out flavours of Cinnamon, Clove, Nutmeg and Black Pepper together. The next is a Pandan leaf that actually gives off the smell of Basmati rice. He moves deeper into the plantation as we discover some coffee and cocoa. Although there are five major coffee plants that grow, the Robusta variant is most commonly found in the southern part of India. Shinoj also grows some Arabica as well. The small red colour pods are eventually dried and roasted down to the coffee that we love so much. Some of the cocoa pods lie hollow of the ground. Shinoj tells me that the squirrels of his gardens have been at work.

“There has been a sea of change in the crops we grow now. Earlier it only used to be only Cardamom, Clove and Coffee. But the import of spices from South America and other countries has created a volatile market. We now have vegetables and other spices too to keep our profits healthy.” Senthil tells me as I trip over some roots peeking out of a mound of soil. I scrape off a part and an orange coloured piece of turmeric peeks out. The medicinal qualities of Turmeric have been expounded since the time of the vedas. It is one of the strongest anti-inflammatory agents which packs a load of antioxidants.

 

Finally we reach our prize, the Green Cardamom. Tiny stems of green pods erupt from the roots while another part shoots skyward. The green cardamom grows pretty freely in the wild in these areas but the advent of new sources in Guatemala are forcing Indian farmers to adopt new strategies. I also find some Vanilla and fall in love with the intricate process needed to extract it. It takes multiple episodes of drying, wrapping in cotton to produce the vanilla pods and extract, making it the 2nd most expensive price. One of the newer things that I learn about is Cinnamon. There are actually two types, the outer bark which is more straight and has equal amounts of spice and sweet. The inner bark of the Cinnamon is curly and gives off a much more sweeter flavour.

He also shows me around a few of the bright coloured orchid flowers in his garden. These help to attract the bees so needed for the cross pollination of the crops. His whole plantation is an unique amalgamation of colours and aromas that will totally refresh you. Their is a shop outside for you to buy the best of these spices at dirt cheap prices. I buy up my fill of Cardamom and Black Pepper before heading back. We end our tour at Shinoj’s house where he invites me in for a cup of his plantation’s coffee.

Travel Tips:

The best season to visit is from July-Feb. The Monsoons starting from July make the colours pop out even more.

Wear sturdy footwear as you may be climbing small mounds of dirt.

The 332nd Wine Dinner of the @delhiwineclub at The Spice Route, @imperialdelhi featured some amazing wines served along with some delectable South East Asian food.  We tried out a @villasandi Prosecco, followed it up with Guwerztraminer from 19.59. In the red wines, we had a Pinot Noir and a Malbec.  The food was delectable with flavours from across South East Asia. Although there's no shortage of food onboard Royal Caribbean, one cannot miss eating at their Italian speciality restaurant Giovanni's Table.  Every meal at Giovanni’s is a celebration of rustic Italian flavours. You’ll find all your favourite Old-World classics on the menu here. Our meal started with a bread basket served with olive oil, Parmigiano Reggiano and balsamic vinegar on the side.  For starters we had the very refreshing Caprese Salad and Crispy Calamari served with lemon and garlic aioli. It was quite a task deciding on the mains with every dish on the menu being quintessential Italian classics.  While Sudipto went for the Osso Buco with creamy polenta and seasonal vegetables and I had to order my favourite Lamb Bolognese with house made spaghetti.  Do not miss asking the serving team to suggest the perfect pairing from a wine list that ranges from Sauvignon to Pinot Noir.  Finally finished the night off with a big creamy spoonful of Tiramisu. Sitting by the rooftop overlooking the waterfront, @oliveandseaftl is the perfect embodiment of Mediterranean food for our trip to Fort Lauderdale.  We started off with the Mezze platter which features not only the regulars including hummus, labneh, tzatziki, baba ganoush, there is also some bulgur tabbouleh and red pepper walnut relish served with some house bread, pita and lavaash.  Although there are quite a few fresh salads packed with Mediterranean flavours including one with mixed greens, goat cheese, honey roasted Squash, walnuts, apples and literally topped off with Pomegranate molasses, we tried out the Charred Crispy Octopus served with a Garlic labneh, Green Olive Tapenade and Crispy Potatoes.  For the mains, we also got ourselves some skewers cooked perfectly and served with some Tahini and a Coriander Chili relish.

We headed over to @evenkeelasolas in Fort Lauderdale to try out some fresh seafood, offering a modern take on Floridian Coastal cuisine. The restaurant has a casual yet trendy ambiance, with both indoor and outdoor seating. It's located on one of the numerous piers dotting Fort Lauderdale's waterways  We tried out the Oysters served with hot sauce, tarragon and lime along with a smoked fish dip and a shrimp ceviche. We followed it up with Himachi Poke Gyoza Tacos, grilled Octopus and a hot Lobster Roll. Often listed amongst the best beaches in the world, Anse Lazio in Praslin, Seychelles truly open gates to altogether new world. And let me tell you, reaching here was quite a journey. One has to reach the bottom of the hill to Zimbabwe either by car or bus, then one has to trek over a large forested jungle clad hill and along some way before you reach the beach. But the journey is well worth the effort with views that take your breath away perfect with fine white sands and gorgeous turquoise waters that are so clear you can watch the fish swim around you, it's no surprise Anse Lazio is frequently called 'the best beach in the world'.
