MasterChef Australia has captured the imagination of food lovers like never before. With dishes that we had only heard about in 5 Star hotels a daily feature on the show, it has been quite a showcase of modern Australian cuisine, one which complements the growing ethnic admixture in Australia. To showcase one of Australia’s best product Avocado, Visit Melbourne brought Chef Scott Pickett to India on a masterclass at Hyatt Regency.

Scott Pickett’s rendition of Avocado
The masterclass at Hyatt Regency Delhi started off with Chef Pickett telling us about his life story and introducing us to the varied flavours and textures of Avocado. There was a flamed one along with one paired with sugar and salt. The dinner following that was even more spectacular.
What Chef Scott Pickett cooked for us?
We started off with a charred Salmon which was served with horseradish and a sweet Cicely Sauce. The umami flavour from the fish combined with the sweet flavours making it a beautiful dish. Now a Bengali can never have enough of fish and Chef Pickett bestowed his fervor upon us with another fish dish. This time it was a Barramundi flavoured with soy. The soft flaky texture of the dish exploded on my mouth with the salty soy. But it was the dessert that took the honours of the night. Valrohna chocolate combined with Avocado and Beetroot to give it a tiny twinge of acidity that cuts across the bitterness of the chocolate.
