The JW Marriott Delhi Aerocity has started a culinary journey on the Grand Highway. A journey that will start from the north western Frontier province of Kabul and end in Kolkata. Sher Shah Suri started the construction of this grand highway, also known as Grand Trunk Road or Sher Shah Suri Marg in the 16th century. It’s aim was to speed up transport and communication through his empire. The variety of culinary experiences along the length of this road is something that is truly mesmerizing. This is where the eccentric genius of newly appointed Executive Chef Vivek Bhatt comes in. Chef Bhatt actually tries to recreate what he has tasted locally and he succeeds quite beautifully. Although the festival dominates with flavours of North India, the authentic experience will make you enjoy even more.
The festival is being hosted at their effervescent all day dining restaurant, K3 with an ambience that takes you back to the pinds of Punjab. Replete with a desi Sharaab Theka, Khaats and music, the experience is your trip through the lush green plains of North India. The menu is a part of the buffet and has some really interesting twists.
Five Dishes that you must try
Afghani Burra Kebab: On of Afghanistan’s trademark dishes, the Burra Kebab will impress you with straight, raw flavours from the Pashtun hinterlands. The meat is soft
Peshawari Chicken Chapli Kebab: Pakistan may have given us Fawad Khan and Coke Studio, but one of their greatest contributions is the Chili laced Chapli Kebab.
Banarasi Paan Ke Talwan Kebab: The flavorful Banarasi Paan combines with some potatoes tempered with Heeng and deep fried in Besan(gram flour). Each bite is an explosion of the flavors of Paan on the palate.
Meat Beliram: The succulent mutton preparation from the Beliram chef of Punjab. The robust flavors of Garam Masala enveloped in the creamy flavours of yoghurt tingles your taste buds in the best way possible.
Afghani Chicken Biryani: A milder yet more flavorful cousin of the Lakhnawi Biryani, the presence of Khus, caramelized onions and dry fruits gives it the characteristic taste.
Try these with the rustic Anda Paranthas and Missi Rotis. There are some alcohol laced desi cocktails to accompany you on your travails. Finish off with some love from the from across the country in the form of some Langcha, Jalebi, Doodh ke Laddu and Badam Biscuit. The Treasures of the Grand Highway festival is on till 13th August and the menu will cycle through many changes. Do try out this culinary journey and let us know in the comments below what impresses you the most.
