The 26 Cantons of Switzerland are member states of the Federal State of Switzerland. Each canton was a fully sovereign state with its own borders, army and currency from the Treaty of Westphalia until the establishment of Swiss federal State in 1848. Food talks
Having the privilege of the General Manager of Swissotel, Mr Marco Saxer and Executive chef, Mr Pranay Kumar Singh joining us over the spread, featuring the popular dishes from seven Cantons of Switzerland like Fribourg, Bern, Valais, Basel, Appenzell, Ticino and Zurich, thereby also giving us an opportunity to taste an array of world cuisine as well.
We were served the traditional Swiss bread (and cheese) with Mushroom soup which was wonderfully warm and delightful . Bite-sized chicken cordon bleu followed accompanied by Chef Pranay’s own concoction of apple, raspberry and cranberry juices – named Swiss Sensation. We tried many more dishes from the menu that featured popular dishes from the various cantons of Switzerland including the käsefondue (cheese fondue: they used a delicious mix of emmental and gruyere).
Major highlight of the day for us was undoubtely the Margherita pizza. Simple thin crust pizza from the region of Ticino known for recipes that have been handed down from one generation to another but with the touch of Chef Pranay it was the modern re- visitation of traditional recipes. From Canton of Basel we had the delicious and flavorful Basel style Salmon to end our meal. Consisting of mashed potato, crisp onion and butter emulsion it had a German and a Swiss essence to it. From their ala carte menu dedicated to World cuisine. One can try their Prawn spring rolls with wasabi mayo. Pan Asian flavors such as pak choi, ginger and touch of wasabi makes this one interesting. From the Indian section, I really liked Murgh Malai tikka which is Tandoori roasted chicken chunks in a cream. It was juicy because the chicken breast absored the lime juice and other spices really well during the marination process. One must also give a try to their Bengali speciality as well, Here Chingri Malai curry scores the most. Prawn cooked with coconut milk in mustard oil, along with spices such as cardamom, bay leaves, deggi mirchi and turmeric.
Overall its a great place for ordering ala-carte or even just a coffee and if you are not so particular about desserts, even the lavish spread consisting of an array of world cuisine at their buffet is also true value for money.
