The Spice Route Summer Menu 2016 is here and the flavours of mango burst alive as Chef Veena Arora does her yearly ritual. The menu at The Spice Route holds fort with staples from Thailand along with a few renditions from other parts of Asia. But one thing this menu always surprises you with are Sri Lankan flavours. The sourness of tamarind and raw mango mixed with the curry leaves is a taste that is not easily forgotten. We list few of her favourites from this year’s menu that are sure to become winners.
Yum See Kler: A fresh, spicy salad filled with the freshness of raw mangoes and sweetness from the ripe ones while the raw papaya and carrots give it that crunch. Dressed up in some palm sugar and peanuts, this salad is a perfect cooler this scorching summer. A Sri Lankan style prawns cooked with raw mangoes and curry powder also dominates the picture.
Pla E Saan: Crispy fillet of sole served with a spicy palm sugar sauce that hits the correct parts of your palate with both the sweet and spice tickling your taste buds. The shredded raw mango on top adds a dimension of sour to the dish.
Ga Xao Hot Diu: A Vietnamese styled crispy chicken ad mixed with ripe mangoes and cashew nuts which enhance the texture complexity of the dish.
Maambalam Katrikai: One of the best uses of eggplant we have seen in a long time. Paired with water chestnuts and cooked with curry leaves, raw mango and a hint of tamarind. This spicy dish goes like a dream with the sweet Mango Appams(Maambalam Appam).
Chef’s special Mango Rice: Sticky Thai styled rice cooked up with some ripe mangoes and coconut milk, it is a great accompaniment to any of the spicy main courses. Just add a few teaspoonfuls of sugar and you got a dessert on your hands.
