Rajasthani cuisine, is a splendid array of unique, rich, colorful, spicy curries and mouth-watering Delectable sweets. This style of cooking, is not only the reflection of wealth and prosperity that is an integral part of Rajsthan,  but also reflects the traditional warrior lifestyles and the availability of ingredients in this water starved region. Food that last for several days was given more preference. Due to the scarcity of water, the cuisine involves use of milk, yogurt or buttermilk to wet the gravies.C360_2015-10-25-15-05-03-886

It was indeed an enlightening and joyful experience for one and all, when Executive Chef Vikash Prasadh decided to treat his patrons with delicious and authentic Rajasthan cuisine at his popular World cuisine restaurant Sirocco.

Daal Baati Churma : Rajasthani food is incomplete without the mention of the famed Dal-Baati-Churma. What started as a picnic food has become a distinctive cuisine of the State. It consists of baatis or flaky round breads baked over firewood . But one thing common for baatis, irrespective of their cooking technique is that they are always served dipped in ghee accompanied with panchmel or panch kutti dal and churma. The dal is cooked with ghee, the masalas in the dal are fried in ghee and more ghee is mixed into the dal before serving. The three together, simple though they sound, make a very filling meal. Gatha Kari :Prepared with gram flour balls and tangy gravy made up of buttermilk and spices, it is best enjoyed with Rotis or Rice. Laal Maas : The legendary red meat curry of Rajasthan. In a predominantly vegetarian cuisine, the only non-vegetarian dish to really stand out is Laal Maas which literally translates to Red Meat in reference to the color of the dish with comes from the fiery red chillies in it. C360_2015-10-25-15-05-03-886

In a nutshell, The visit to this all day dining was more fruitful than my expectation.A culinary rendezvous with the best of Rajasthani cuisine has been started in the city at Crowne Plaza hotel. The Rajasthani food at Sirocco, which offers a fabulous variety of mouthwatering dishes, could be enjoyed with live counters of Continental cuisine and Indian and Chinese food.
