Summers are always a herald for something new. Executive Chef Liam Crotty ushers it in with a brand new menu at the Kitchen District, Hyatt Regency Gurgaon. The new menu is full of flavours ranging from Europe to India but the most essential part is that it fills you up without weighing you down. Weekly celebration of fruits have meant that even soups and mains are being created with strawberries and pineapple. We settle down for a taste of his new menu by CDC Pankaj Kumar Shahi along with a few tit bits from the month long South Indian promotion by Chef Ajith Kumar.
We start off with a Pan Seared Scallops in a Carrot Ginger Puree and Fish Brandade. The light watery flavours of the scallops along with the sweetness of the carrots and the texture of the fish give it a great compliment. Next is a Tawa Fish which literally singes your hair off with the heat that Chef Ajith Kumar imparts. The Goat Cheese salad is a delicate balance of flavours with the salty cheese combining with apple puree, roasted beetroots and caramelised onions. Chef Shahi brings in a delicate pea soup. Full of nourishment so essential for the summer months, the green earthy soup is combined with a salty mascarpone cheese.
The mains include a perfectly cooked Norwegian Salmon with herbed mashed potatoes along with spring onions. Chef Ajith again makes a comeback with some of his Malayali masterpieces. A Meen Moilee (Fish Curry) that takes it’s sourness from Green Mangoes and we combine it with some delectable Mutta Paranthas. Malayali vegetarian dishes have a distinction of being on bit of a bland side but his Avial actually expresses the taste of the vegetables in it specially the juicy drumsticks.
The mixologist Niraj Ved in the meanwhile has spun up a Cinnamon based Lemonade combining the sweetness with the sprightly drink for the summer.
