Leaping Caravan, one of Delhi NCR’s leading food-tech company been redefining the Indian Dhaba around the corner while paying homage to the Grand Trunk Road. The menu has been celebrated for its eclectic options of delectable hand-me down heritage recipes from historically celebrated locations such as Amritsar, Delhi, Howrah, Lahore, Peshawar, etc. across the historical Grand Trunk Road.
To take forward the mission to create authentic family recipes, Leaping Caravan is introducing a limited edition menu specially curated by The Shirazine herself, Parul Shirazi. The menu had been created using home techniques and spices we use in everyday life giving an authentic home cooked taste to them. The rich, warm flavours are apt for the winter season coming ahead.
The Vegetarian Menu consists of delicious options such as Karnal ke Paneer Kofte, a paneer dish so soft that it melts the moment it touches the palate. The gravy is moderately rich but it’s the retention to salty taste that makes this one a winner as most koftas tend to take on a sweeter note. The warm, earthy taste of the daal is a perfect antecedent to the dishes without excess of butter killing of the beauty of the pulses Also on the menu is a classic family recipe of Pom’s Dhaba Ghobi, a recipe mastered by Parul’s own mother and named after her nickname. This is something that most of us would be tasting at home. A splendid balance of spices without burning the roof off your palate.
We absolutely fall in love with the non vegetarian menu. Consisting of delectable and rare recipes such as Beeji Ka Chicken Bharta, an old recipe that is similar to Chicken Tikka Masala, the tikkas are shredded to bharta form. The sought amount of sourness and heat on this dish gives it that extra zing. Also on the menu is the lip smacking RawalPindi Meat Curry, an typical old school across the border recipe where slow cooking and smoking of spices are more common than the use of tandoor. The Murg Biryani is a beautiful cornucopia of spices and well cooked rice without a slathering of oil.
