Executive Sous Chef Manoj Rawat has curated a menu along with a range of Masala Chai which will pretty much blow your mind away. We start off with some tit bits to enjoy the Cardamom packed tea. Some Rusk and the others are a perfect way to crunch your way while having tea.
The concept of an elaborate high-tea was something that originated during the Elizabethan era in England. A tiered panel of sweet and savoury delicacies adorned the table and you sipped on some tea from Assam or Darjeeling. The Indian high tea, on the other hand takes inspiration from all over the country and gives you some flavours that you’ll truly swear by.
What all we ate at the Indian High Tea?
From the East in Kolkata, Chef Rawat has taken inspiration from the Egg Devil. An egg coated with a spicy potato filling and then deep fried. There is also a Bun Tikki from Dehradun but one of his most innovative renditions in the menu are the Matar Kulcha. Redesigning a classic is never easy but he tends to keep the original flavour profile intact while changing the texture. Mumbai is represented by the Bombay Sandwich which has butter and Green Chutney in copious amounts. The South of India also gets a chance on the platter, there is an ubiquitous Mirchi Bonda from Hyderabad.
Not only has Chef Rawat put up savory items on the try but he also includes some desserts. Although Indians do not really have a habit of eating their sweets with tea, but the Kaju Roll and Kala Jamun is something that you can definitely experiment with. But no rainy season is complete without the inclusion of the Corn Cob. The one he has been steamed up and rolled in butter and chili giving it a sweet yet hot flavour.
