The Wine: Chenin Blanc

Chenin Blanc is one of the mildest and frutiest white wines I have tasted. It’s easy taste makes it super easy for beginners to try tasting and for connoisseurs to try deciphering. It has been grown in the Loire valley of France for nearly 1300 years and is a pretty versatile grape which can be grown in a multitude of ways.

The wine is one of the finest and light white wines that you should try out, specially if you are starting out. With a light citrusy and fruity flavour, it’s slight zing is very refreshing to the palate and is perfect at the start of the evening before heading to the heavy reds. The price is around INR 540.

The grilled prawns are Chef Vikramjit Roy’s tribute tribute to Jackson Pollock with his drip painting technique coming to the fore. The prawns are served with mango and black bean sauce along with a mash of purple cabbage. The melange of sweet and citric flavours are very characteristic Chef Roy’s cooking and leave a lasting impression on the palate.

A rich creamy mushroom soup and delectable tiger prawn marinated with Grover Sauvignon Blanc, garlic and mustard at Wildfire, Crowne Plaza Gurgaon. It pairs very well with seafood, fresh cheese and white meat and did a fantastic job with the Camarao that night.

Salmon: Served fresh and hot off the spear, the tender Salmon came with lime, chilli, garlic and paprika.

The Tawa Chicken Brulee pays homage to the core of poultry, the Chicken Supreme. Braised with yoghurt, coriander and chili it is served with a Ulte Tawa ka parantha. The Idli Podi spiced garden on the other hand, is an explosion of colours and fermented flavours. There is a smoked quail egg, fermented gooseberries, some pickled courgette, cucumber and roasted young shallots. Leela Ambience Gurgaon’s sommelier Ekagar Sharma, combines these two with Grover Zampa‘s Art Collection Chenin Blanc.

But it was the most recent combination was the one interested me the most. During the 25th anniversary of Grover Zampa, I combined this wine with a Dal Baati Choorma, a quintessential Rajasthani dish. The rich and sweet flavours combines with the citrus flavours perfectly and is something that you must try out.
