The Indian style of eating is quite unique. But with Indians travelling abroad on a regular basis, a paradigm shift is being noticed is the way Indians are eating. Slowly but steadily, the western style of eating in courses is infiltrating into our dining out. But the burning question of the day is whether this style of flavours and eating in courses be acceptable to the Indian audience? Well that is going to be a difficult job indeed with the stubbornness of Indians preventing such experiments. We would still like to stick to our traditional methods rather than embracing new ideals. Instead of blindly copying from the west, it would have truly paid to experiment with Indian flavours. Taking note of this motto, one Chef is incorporating the concept of West with the flavours of India through his EPIC menu.
Chef Abhishek Gupta spent a summer over at the award winning restaurant and came back with lessons of a lifetime. He learnt some essential cooking techniques including the usage of local ingredients to spruce up the flavours. He uses lacto fermentation to change the flavours to something new. Although this experimental EPIC menu is going on at The Leela Ambience Hotel Gurugram, you must try this out to experience something new. The menu is going to change over time as new seasons brings new products to cook with.
What you should try at EPIC?
The dehydrated Watermelon carpaccio looks very similar to Tuna but a dollop of sauces and the home cured pork ham adds a whole new level of flavours to it. There is also a Karnataka rice fashioned like a risotto which is combined with a piece of Chicken. Although it simulates our good old rice and chicken, the textures are surprisingly European. Not only does Chef Abhishek Gupta impress, his dessert Chef also impresses with a dessert that uses a different grain to make a fluffy cake which is then infused with a syrup made with berries.
