One of Delhi’s iconic hotels is turning forty and it was time for some nostalgia to be drummed up. The restaurant Machan, Taj New Delhi has been the workhorse of the restaurant over the past four decades and we celebrated the anniversary by trying out some of the dishes from the menu that existed at its inception. It couldn’t have been a better way to experience the menu than having Chef Tapash Bhattacharyya, who has been spearheading the operations since the restaurant opened its doors.
Prawn Cocktail
It was a classic back in the 70’s for a good reason. Traditionally served in cocktail glasses Prawn cocktail is a delicious miniature salad perfect for serving as a starter. Delicious little bites of prawns mixed with mayonnaise and lettuce leaves was a refreshing start to the afternoon.
Mutton Cutlet
A Bengali will never be far away from a cutlet and the Machan Mutton Cutlet was a delicious little gem on a platter. The rich flavours of meat burst through the super crispy exterior while I douse it in some of the green pudina sauce.
Chicken Montecarlo
The Chicken Montecarlo has been one of the legendary dishes to come out of the Taj Kitchens. Made up in typical continental style, the creamy yet subtle flavours totally shine through.
Hazratganj Ki Biryani
The name itself takes you to the aromatic lanes of Lucknow. The Hazratganj biryani is put together with fragrant long rice and slow cooked soft meat just melts in your mouth leaving a burst of deliciousness behind. Served in small matkis and garnished with fried onions is a must try.
Caramel Custard
We end off with the orange flavoured caramel custard. I have always been a big fan of this dessert but the addition of a subtle orange flavour to it kicks it up quite a few notches.
