Whisky Samba, Gurgaon
The menu at Whisky Samba is replete with flavours that truly astound you with it’s simplicity. There’s a Tofu Tartare that comes right at you, combined with a spiced Herb Oil and Roasted Sesame that gives it a typical earthy flavour. But that’s not all that the Bengali Chef presents to us from his repertoire. He serves out a plateful of Prawns accompanied with Fermented Beans and Chili sauce. He brings a throwback to his Bengali roots with a White Snapper made in a Kashundi. The Kashundi, a predominantly tangy yet spicy concoction of Mango and Mustard helps provide the kick behind innumerable Bengali dishes. But Chef Roy uses the one he remembers from his childhood with a predominance of sour flavours to temper the fish with. He serves it along with some Kerala Red Rice and Avocado flatbread.
Although flavours are something that he has complete mastery of, but it’s his plating that takes my breath away, just like at Tian. The dessert he serves is called Nut & Bolts and features multiple components on it including 70% Callebaut Dark Chocolate along with an ice cream made from Munnar Coffee and a delicate Vanilla Cream to balance it all out. Whisky Samba’s new menu is filled with magic created by Chef Vikramjit Roy and is something that you need to try out soon.
