The ITC Hotels have been a harbinger of curating international food festivals quite often. Recently, they organised a food festival along with the Embassy of Morocco to give us a taste of Morocco. Morocco, being located in the Mediterranean has an abundance of fresh tropical produce along with the usage of a good amount of meat. The local influences include French and the Arab cultures which make for quite an interesting combination in itself. During the festival, we tried out quite a few Moroccan dishes and absolutely fell in love with them. The following tells you about the top 5 dishes that you must try out if you’re a holiday there.

Zaalouk

We North Indians are addicted to Brinjals(Baigan) and the umpteen number of dishes curated around it. The Moroccans have their own Eggplant fascination. The Zaalouk is a salad which can also be used as a dip along with breads. Made with a concoction of tomatoes, garlic, olive oil and a heavenly dash of spices, I ate up quite a huge portion of Zaalouk.

Lamb Kefta with Tomatoes

One reason why I have always loved digging into Mediterranean food is their use of meat and the Lamb Keftas cooked in a sweet yet spicy Tomato gravy is something that you definitely need to try out. It can be combined with either breads or some rice too.

Chicken with Olives

Olives are found by the plentiful in the Mediterranean and it’s superbly fresh and tangy taste combined with Chicken is something that I absolutely fell in love with at the Moroccan Food Festival.

Lamb with Prune & Sesame

Another meat dish, but still combined with the flavours of sweetness, this time that of ripe prunes and a sprinkling of sesame on it.
