Resurgence is the word that defines the new menu at Woktok, The Grand New Delhi. An offshoot of the famous Cascades, Executive Chef Nilesh Dey now masterminds a menu that is going to establish Woktok as one of the premier Pan Asian restaurants in town.

What impresses?

With two private dining rooms and a live kitchen, Woktok is a visual treat with an al fresco area overlooking the majestic lawns of The Grand. The menu, a creation of Executive Chef Nilesh Dey and CDC Kaushik Jadali has a predominance of Chinese influences from the Cantonese and Sichuan regions. There are also some snippets from Indonesia, Japan and Thailand to comprise a Pan Asian gastronomical journey.

Starters

We start off with some Dimsums that literally explode on your palate with flavours.  The Seven Spiced Chicken Dumpling and the Prawn Hagrow hold true to the essential flavours of the meat while the Mixed Mushroom with Cheese is something that will regale you with flavours of earthiness. The Glutinous rice with Vegetables is a perfect meal in a bowl. Wrapped in a lotus leaf, it gives of a typical flavour that will enthral you. There is also a Crispy Spinach which is a delicate balance of flavours and textures. The Crispy Tender Chicken is a chicken with a super light batter tossed for a few seconds gives a complex interplay of textures.

Mains

Chef Nilesh Dey turns the tables on us with a Crispy Cauliflower in Buttery Sauce. Although there is a rarity of cauliflower usage in Chinese cuisine, but this creamy dish is a throwback to days of English rule in the Orient. A Silken Tofu Chili Black Bean sauce explodes the spicy flavours of Sichuan on your palate with the silkiness of the Tofu. The slow fried Prawns with Broccoli and Chinese Cabbage is a perfect antecedent for the Jade Noodles and the Yang Chow Fried Rice.

Desserts

Asian desserts are known for their subtle hints of sweetness along with being light on the stomach. The Black Rice Caramel Custard is a perfect example of that. A delicacy in China thanks to the banished minister, Black Rice has a typical sticky texture which works like a magic for the caramel flavoured custard.
