Although Mughlai food is found in every nook and corner of this city, getting it right is a difficult job indeed. Earthen Oven located in the Fortune Select Excalibur, Sohna Road is a pleasant surprise in itself with the team under the tutelage of Brand Master Chef Inder Dev curating out some food that challenges the best in the city. Although there is an extensive menu on offer, we will bring about some of the delicacies that retain some authentic clean cut flavours of the tandoors from Afghanistan and the surrounding areas.

Mayapuri Burra Kebab (INR 899): Literally known as the Big Kebab, these chunks of meat from the leg are sourced from a lamb weighing 5 kilos in total. Marinated in a plethora of spices, the meat retains its succulent texture along with a perfect balance of flavours.

Kakori Kebab (INR 899): Born in a small village in Uttar Pradesh near Lucknow, the history behind the Kakori kebab is that there were some snide comments passed by a British officer at a Nawab’s party about the coarseness of the Sheekh kebabs. This led to the Nawab asking his Khansaamas to use tenderisers to make a much softer kebab. The predominant flavors in this are that of nutmeg and saffron but unlike what you find in loads of establishments in Delhi, this one retains the subtle balance without the overpowering taste of nutmeg.

Raan-E-Afghan (INR 1499): Another warrior dish from the hills of Afghanistan. The raw, hard hitting flavours of chili along with the succulent chunks of mutton that fall off the piece of leg is astounding. The Rann takes an intense amount of preparation with their being two steps of marination and an even difficult recipe for cooking.

Dal-E-Fortune (INR 649): Although this sounds a bit pretentious, let the name of the Dal not fool you. Basically a Kaali Dal, this one impresses with a typical smoky and creamy flavour.

Gosht Rogan Josh (INR 899): Although this one comes from the beautiful valley of Kashmir, but the essence lies in use of the Kashmiri chillies to impart a bright red colour.

The most beautiful part that Chef Inder Dev focuses on is the use of quality ingredients and lovely balance of flavours made more accurate with his hiring of specialist chefs.
