Let me start with a combo: Prosecco and Prosciutto Pizza. Do I have your attention now? Well, there is no doubt that La Piazza at the Hyatt Regency Delhi makes one of the best pizzas in Delhi. But beyond the high-quality Prosciutto and cheese that is imported, there is another reason which makes these pizzas so finger licking tasty. The reason behind it is the freshness of their vegetables which is sourced right from the farm to table.

Although the Farm to Table concept is something that has been developing in the Indian culinary scene over the past couple of years, but the Hyatt Regency Delhi has been doing it for more than a decade now. The succulent tomatoes which goes into making the sauce and the greens, all are sourced from their owner Mr Shiv Jatia’s farms in Chattarpur.

Why is the Farm to Table concept so awesome?

With the help of controlled and protective farming techniques, the team of horticulturists at the farm are creating seasonal vegetables and fruits all throughout the year. I decided to try out some of these as Chef Ciro Sorrentino, an expat pizzaiolo from Italy, spins up a delectable prosciutto pizza. Some of that fresh tomato sauce along with slices of some high-quality cold cuts from Italy, my pizza experience is exonerated. The pizza which has spent just over a minute or two inside the oven is covered with some Burrata as I dig my teeth into a plateful of deliciousness.
