The new dessert menu at Kitchen District, Hyatt Regency Gurgaon curated by Pastry Chef Ashutosh Kumar does the same. His philosophy of matching multiple components instead to sticking to the traditional sweet and sour is a resounding success. The Jugalbandi of western and Indian flavours also plays a huge part along with his attention to detail. The first of his creations is the Chocolate Pizza(INR 750). Although a relatively rare entity in Delhi NCR with only a few places coming up with the challenge, Chef Kumar’s leaves the competition far behind. He balances his flavours of chocolate with caramel and some salt along with a generous sprinkling of Pecan nuts and a perfectly formed quenelle of mascarpone cheese. A closer look at the combinations reveal a salty and sweet hit on the palate with the nuttiness of the Pecan nuts combining with the smooth, creamy mascarpone.

The second of his creations is a classic from the undivided Bengal, the Kacha Golla(INR 350). Although he makes the rendition commonly found in Kolkata, he spins it up with the sourness of a Hibiscus syrup. The classic rendition from Mahesh Chandra and Mahesh Chandra Dutta’s shop has the flavours of burnt milk while the one found more commonly is pearly white with a fine granular texture.

His third masterpiece is an amalgamation of Indian and western techniques. He poaches a pear in saffron(INR 450) and fills it with herbed goat cheese. Sweet and savory combines in perfect harmony as the flavours leave a distinct mark on your palate.

He also makes a few more sinful delights like the Shahi Tukda topped with cardamom mascarpone(INR 400) and varied flavours of crème brulee like Lavender(INR 400) and Yuzu(INR 400).
